Gazpacho, the tomato-based, cold soup that is world famous, has many variations. Originating in the southern Spanish region of Andalucia, gazpacho is a refreshing summer soup. It is called Italian Gazpacho because the original recipe came from Vitamix (industrial strength blender), using Mario Batali’s recipe.
Gazpacho is made with plenty of fresh tomatoes, tomato juice, and lots of other veggies like cucumber, celery, onion, and zucchini (you can even make a fruity version using watermelon if you like). Some of the ingredients get blended in a food processor and some are left in their chopped form to add texture.
Tiramisu is a popular Italian no-bake dessert made from layers of coffee-soaked ladyfingers and a rich, creamy filling of mascarpone cheese, eggs, and sugar, all topped with a dusting of cocoa powder. The name “tiramisu” literally translates to “pick me up” in Italian, possibly referring to the energizing effects of the coffee or the mood-lifting, indulgent nature of the sweet treat.
